Parmesan Pasta with Zucchini

My brother has an amazing garden and loves to share his goods. He is always begging me to take home truckloads of his fresh grown produce. Like a good sister, I take his produce, but only if he cleans it for me and has it all ready to be thrown in a pot and cooked. With the zucchini I only take it if he has it shredded for me and placed in a nice Ziploc bag.  He also makes huge batches of zucchini bread for all of us, which I will have to blog about later. Maybe he can star in my blog ;)

 My sister loves to saute her zucchini in olive oil and garlic topped with tomato sauce. She considers that a good healthy meal and I enjoyed it when she made it. I figured we could do it one night at my house. When I suggested this to Mike, he got that wild look in his eyes and glared at me. I could tell his was questioning my sanity and knew it was time to back down. He relented and agreed to try it in a side dish, but he did not want it to be the main event. I got it. Remember that whole, "I need a starch and protein in my meal" man thing...

After that ordeal, surprisingly, this dish turned out pretty tasty. Mike asked for seconds and so did my little guy, Bryce.

zucchini pasta

 

Ingredients
3 cups cooked pasta, according to box
1 cup shredded zucchini
1 teaspoon Tastefully simple Garlic Garlic Seasoning
1/2 teaspoon seasoning salt
1/4 cup fresh grated Parmesan cheese
1 Tablespoon Olive Oil


Directions
Drain Pasta and set aside. In small saute pan over medium high, heat olive oil. Add garlic garlic and season salt, once oil is hot, add zucchini and saute for 5 minutes (or until tender), turning occasionally. Grate Parmesan cheese over pasta and and stir together. Once zucchini is cooked add pasta and toss together until pasta is warm.
