I know I have said this before, but let me reiterate that my husband needs a protein and starch included in his dinner. I have been trying to incorporate healthier items on the menu so I came up with this pasta dish. He approved it and my son really enjoyed it, well, he slurped up the noodles pretty fast anyway.
Ingredients
2 cups pasta, cooked
1 cup shredded spinach
1 garlic clove, minced
1/4 white onoin finely chopped
1/3 cup fresh grated paremsan cheese
2 tablespoons olive oil
dash of salt and pepper
Directions
Cook pasta according to directions on box and drain. Meanwhile, heat olive oil in small saute pan on medium high. Add garlic and onion, saute for a minute or so. Add spinach and toss with olive oil mixture, satue for an additional 2-3 minutes or until spinach is warmed and wilted. Combine spinach mixutre to pasta and top with parmesan cheese, stir to mix together. Add salt and pepper to taste.
