I tend to think that I have the best family, and I am not the only one, a lot of people tell me that I am so fortunate to have this crazy family! You see, I have this big, awesome family and we get together often. Our motto has always been, "the more the merrier" so you never know who is going to show up or who will bring a friend with them. We talk about everything, laugh over a lot of it, but most importantly we are always there for each other. One thing we do pretty often is get together for a potluck dinner. Whenever someone is in the mood they send out a text with the time and place and whoever can make it shows up and brings a food item to share. Somehow, we always have plenty of food!
I saw this recipe in my Taste of Home magazine and knew it would be perfect for our next family dinner. I reduced the fat content and it still had plenty of flavor.

My brother has an amazing garden and loves to share his goods. He is always begging me to take home truckloads of his fresh grown produce. Like a good sister, I take his produce, but only if he cleans it for me and has it all ready to be thrown in a pot and cooked. With the zucchini I only take it if he has it shredded for me and placed in a nice Ziploc bag. He also makes huge batches of zucchini bread for all of us, which I will have to blog about later. Maybe he can star in my blog ;)
My sister loves to saute her zucchini in olive oil and garlic topped with tomato sauce. She considers that a good healthy meal and I enjoyed it when she made it. I figured we could do it one night at my house. When I suggested this to Mike, he got that wild look in his eyes and glared at me. I could tell his was questioning my sanity and knew it was time to back down. He relented and agreed to try it in a side dish, but he did not want it to be the main event. I got it. Remember that whole, "I need a starch and protein in my meal" man thing...
After that ordeal, surprisingly, this dish turned out pretty tasty. Mike asked for seconds and so did my little guy, Bryce.
I know I have said this before, but let me reiterate that my husband needs a protein and starch included in his dinner. I have been trying to incorporate healthier items on the menu so I came up with this pasta dish. He approved it and my son really enjoyed it, well, he slurped up the noodles pretty fast anyway.
I needed a side dish for our family Easter dinner (which we celebrated a week early) due to scheduling conflicts. This was the perfect option and everyone said they enjoyed this gooey-cheesy blend. I used whole wheat pasta, but the other flavors were so good that I don't think many noticed. I made mine and stored it in the refrigerator for a few hours before baking. So I increased the baking time to 30 minutes.
