My husband received a grill basket for his birthday, I didn't realize how much I would love that thing. He marinates the shrimp and drizzles olive oil and sprinkles seasonings over the vegetables, throws them in the grill basket, drops it on the grill and in a few minutes we have an awesome, healthy meal! We used a Williams Sonoma Tequila Lime marinade, I forget the exact name but we can't find it anymore. It was soooo good on the shrimp. We have also used the Garlic and Herb marinade from them and it is equally as delicious.
I have no real ingredient list or directions for this one. Just use thawed, peeled and deveined shrimp, put them in a marinade of your choosing. We slice up zucchini and summer squash with onions and peppers, drizzle the olive oil and sprinkle with seasonings.
We do put the vegetables on the grill a little earlier than the shrimp since we like them tender. The shrimp only take a few minutes, just cook until they turn pink.
