Baked ziti is a simple meal to make that fills the crowd. It is much less time consuming than stuffed shells or lasagna, but still has that cheesy, red sauce goodness.  We had some ricotta cheese and leftove Italian sausage so we threw this together. Mike liked it and ate the leftovers so I consider it a success.

Baked Ziti

I really don't have a recipe or measure anything when I make baked ziti.  I kind of just use what I have on hand so if you're making this feel free to subsitute or omit items. In fact, I didn't have ziti pasta for this so I used penne pasta.

INGREDIENTS
One box cooked pasta, drained.
About 2 cups ricotta cheese
One 8 oounce bag of Italian blend shredded cheese
1/3 cup grated parmesan cheese
1 Garlic clove
One 14 ounce jar of tomato sauce
1 Tblspn olive oil
One medium onion
One bell pepper
1/2 pound ground Italian sausage meat
Oregano, Basil, salt and pepper to taste

DIRECTIONS
In large sauce pan heat olive oil over medium-high heat. Add chopped onion, minced garlic and bell pepper, saute for a few minutes. Add sausage to pan and brown on both sides.  Stir in sauce and seasonings, remove from heat before sauce bubbles.

In large bowl mix cooked pasta with cheeses (set aside about 1/2 cup of the shredded cheese). Poor in sausage and sauce and mix all ingreditens together. Pour all pasta, cheese and sauce mixture into 13x9inch baking dish, top with remaining shredded cheese.  Cover with foil and bake at 350 until cheese melts or sauce bubbles, just until it is heated through.
