This was our first time making grilled pizza. We made the dough and the sauce. I was nervous about throwing dough on the grill. No need to worry, it worked out fine and didn't stick. The roasted red peppers added just the right flavor to the sauce making it slightly more interesting than your basic tomato sauce. We grilled chicken to throw on top so that our dinner contained a protein. We will defintely be having grilled pizza again this summer.
DOUGH
1 (1/4-ounce) package active dry yeast Rapid Rising (2 1/4 teaspoons)
3/4 cup warm water
1 3/4 to 2 cups flour, plus additional for kneading and dredging
1 1/2 teaspoons salt
2 teaspoons olive oil, plus 1 teaspoon for greasing the bowl
Whisk together the yeast and 1/4 cup of the water in a small bowl while you measure and mix flour and salt. Add 1 3/4 cups of the flour and salt in a large bowl. Add the yeast and water mixture, remaining water, and the oil, mix together. Place the dough on a floured surface and knead. Coat a bowl with the remaining oil, put dough into bowl and flip dough to coat with oil. Cover and place in a warm place until dough expands, about 30-45 minutes.
Preheat the grill to high. Once the dough is risen, divide in half and roll out. Pat oil onto dough and grill on both sides until golden brown.
Sauce
I used my Tupperware chopper to make the sauce. I absolutely loved it. I threw all the ingredients in there with out dicing them with a knife. A few quick whirls and my sauce was ready to spread over my pizza.
You can throw whatever you would like into your sauce. I have listed below what I used for the roasted red pepper sauce that we loved.
Sauce Ingredients
6 ounces tomato paste
1/2 a 12 ounce jar of roasted red peppers or to taste
1 garlic clove
1/2 white onion
salt, pepper, oregano, and basil to taste
Mix all sauce ingredients in a food processor or chopper. Spread sauce mixture over grilled pizza dough. Use toppings of choice on pizza. We used slices of fresh mozzerella and grilld chicken. Put pizza back on grill to melt cheese. About 5 minutes in a 450 degree grill.
