White Chicken, Artichoke and Spinach Pizza

I had my sister and a friend over for dinner and we wanted to make something together. We figured pizza was something quick and easy.  We all picked up the various ingredients. We used the Gold Medal Whole Wheat Pizza Crust recipe which only takes 20 minutes to rise. We all agreed this pizza was excellent and we loved the fact that we used low fat ingredients and achieved a very satisfying result. We had lots of fun, but we were in a semi rush since Kelly had a 20 minute drive home and the snowstorm was upon us. Kelly and Laura were nice enough to pose as "pizza models" for my blog.

Ingredients

1 cooked chicken breast sliced

1 cup of spinach leaves

2 artichoke hearts

8 ounces fat free ricotta cheese

1/4 cup parmesan cheese

4 ounces part skim shredded mozzerella cheese

1/2 tablespoon minced garlic

Basil

Oregano

Salt

 

Directions

Prepare dough as directed according to Gold Medal Whole Wheat dough recipe. In small bowl mix ricottea cheese, parmesan cheese, minced garlic and salt. Roll out half of the dough for pizza. Transfer dough onto baking stone and pinch edges into crust. Spread ricotta cheese mixture over dough, top with shredded mozzarella cheese. Spread pizza evenly with chicken, spinach and artichoke hearts. Sprinkle with basil and oregano. Bake at 425 degrees for 20 minutes.
