I adapted this recipe from a version I saw on The Food Network . It seemed like a slightly healthier alternative to chicken wings, which I so often crave. I changed the recipe by decreasing the amount of butter and blue cheese and omitting the olive oil. I used my grill pan for the chicken so I had no need for the olive oil and decreasing the butter just gave it more buffalo flavor.
Ingredients
4 boneless, skinless chicken breasts
1/8 pound blue cheese
Kosher salt
Freshly ground black pepper
3 Tablespoons butter
2 tablespoons hot sauce
2 tablespoons white vinegar
Directions
Heat the oven to 350 degrees F. Cut a slit into each chicken breast and stuff with the blue cheese crubmles. Season with salt and pepper. Grill the chicken on both sides until browned, about 3 to 4 minutes per side.
Put the chicken into the oven until it is cooked through, about 8 to 10 minutes. In the microwave melt the butter, add the hot sauce and white vinegar and stir. Pour the sauce over the hot chicken and put back into oven for 2 minutes or until sauce bubbles.
