Bryce had his first birthday over a month ago in May. I am just now finally getting around to adding the recipe and pictures of his cupcakes to my blog. I made the cupcakes with a pound cake recipe. These turned out so delicous and we topped with a strawberry buttercream icing. They were a huge hit!
I usually take this recipe and make it in a 13x9 inch pan. We then cut into small cubes and throw in a bowl with fresh berries and vanilla ice cream or vanilla pudding. For Bryce's cake which sat on the top of the cupcake stand, I used this recipe and poured into two 9 inch round pans. I cut each cake in half and filled with the red strawberry buttercream icing for Bryce. With so much butter and sugar it doesn't matter how you serve this cake, it will be amazing.
Ingredients
3 cups Flour
3 cups Sugar
1 teaspoon salt
3 sticks of butter (1/2 cup each), softened
5 eggs, separated
1 Tablespoon vanilla extract
1 1/8 cup milk
Beat 5 egg whites. In separate bowl mix 3 cups flour with salt and set aside. Cream together butter and sugar, mix in egg yolks and vanilla. Alternate adding the flour and milk to the butter mixture. Fold in beaten egg whites. Pour batter into 13x9 inch pan or cupcake pan. Place into cold oven and heat to 325 degrees. Bake for 1 - 1 1/2 hour if in cake pan or 30 - 45 minutes if cupcakes or until toothpick comes out clean.
I only have 2 dozen cupcake pans and this recipe makes more than that so I had to put the second few into a heated oven. It worked fine just didn't take as long to bake.
