Classic Quesadilla

This is just your basic every day quesadilla, so easy to make when you're in a bind. I am still working full time and also training as a realtor in the evenings so sometimes dinner is rushed.  These were perfect for an evening meal, took about 10 minutes to make and even less time to eat.

Quesadilla

 

Ingredients
Whole grain tortillas
Chicken Breast
Peppers
Onions
1 tablespoon olive oil
Cheddar Jack Cheese or Mexican Blend Cheese
Adobe seasoning
Salt and pepper

 

Directions
Cook chicken breast, season with Adobe and dice into small pieces. Saute' peppers and onions in olive oil with a dash of salt and pepper. Set both aside when complete.

Spray bottom of large non stick skiller with cooking spray. Lay flat one tortilla, spread a layer of cheese, then chicken and onion and peppers, sprinkle additional cheese over top and cover with a second tortilla. Cook until cheese begins to melt and tortilla goldens, flip over to brown second  tortilla.
