Baked Ziti with Sausage

Baked ziti is a simple meal to make that fills the crowd. It is much less time consuming than stuffed shells or lasagna, but still has that cheesy, red sauce goodness.  We had some ricotta cheese and leftove Italian sausage so we threw this together. Mike liked it and ate the leftovers so I consider it a success.

Classic Quesadilla

This is just your basic every day quesadilla, so easy to make when you're in a bind. I am still working full time and also training as a realtor in the evenings so sometimes dinner is rushed.  These were perfect for an evening meal, took about 10 minutes to make and even less time to eat.

Parmesan Spinach Pasta

I know I have said this before, but let me reiterate that my husband needs a protein and starch included in his dinner. I have been trying to incorporate healthier items on the menu so I came up with this pasta dish. He approved it and my son really enjoyed it, well, he slurped up the noodles pretty fast anyway.

I think we've had this piece of meat in our freezer for over a year...yea, I wasn't expecting much from this one. I knew since it was frozen for so long that it needed some marinated love. Mike had put together a marinade for a pig roast a couple weeks back and it was pretty good. It had apple cider vinegar so that inspired this marinade.  This marinade flavored the meat, tenderized it and made it delicious. Mike really liked the added flavor of the marinade juice on his.

Mike grilled it on the grill and I have to confess I like my red meat done well. This is a picture of my plate, his was done "properly" with much more pink meat.

Chicken & White Bean Enchiladas

I was looking for healthy recipes since I am trying to lose the baby pounds. My husband hasn't been traveling for work and he likes to eat a "real" (a protein and starch are required) dinner. I made some recipes from Gina's blog Skinnytaste before so I went back to see what she had new. I found this recipe for enchiladas, and Oh-My-Gosh, was it good. It reminded me of the Mexican Lasagna I had made a few months ago, but not near as fattening.

  

I should also add that I worked late the night we ate these and Mike pretty much had these half way complete when I walked through the door.
